Icarus Collaboration and Chuckle Heads 7 Can Release
For the very first collab release under our own roof, it comes after close to 8 weeks of patiently waiting (so you know it’s not an IPA), we bring to you our New Zealand Pils, “It Happens” with our good friends in Lakewood, NJ, Icarus! We also wanted to drop an IPA that complements this beautiful, almost juicy pils, so we are bringing back a new version of Chuckle Heads, Citra/Strata. We had a lot of fun brewing this beer with Jason and his amazing team, and now we hope you enjoy drinking it as much as we do!

We were beer nerds before we became brewers, so our collab with Icarus is definitely a special one for us. If you like juicy IPA in NJ, then you have either been to Icarus or tried their beer. But not only do they make some of the best IPA in the state, they always have such a wide range of beers on their menu. So, when we discussed doing a collab under our roof, we decided to take our Royal Rug recipe and give it a twist. The boys at Icarus really wanted to use Pac Sun, and since we have a generous supply of it from our friends @crosbyhops we decided to make a NZ Pils using a healthy dose of our favorite hop at the end of the boil. The result is a juicy yet crisp Pilsner with hints of pear. As the hidden nugget on the can says, we go together like peas and carrots.

We are having so much fun with our two-hop series, Chuckle Heads. We don’t throw a bunch of names of different hops into a hat and pick two. We really try to think how hops will interplay with one another through vigorous discussion. We even adjust on the fly by touching up with an additional dry hop during the maturation process, favoring one hop or the other. We chose Strata for the strawberry notes which we believe would complement the citrus/pineapple of Citra, and the two combined to form a beautiful tropical blend reminiscent of Tangerine and Strawberry.

What If we brewed an everyday hazy IPA that you just knew was your “go-to” beer? Mr. Reliable in a can! What If it was also clean and balanced? We’ve been contemplating what our flagship IPA recipe should taste like since the time Alternate Ending was nothing more than an idea on the back of a napkin. We knew we wanted something that was crushable, yet also remain true to a traditional IPA with notes of pine and citrus. What If, What If? was really YOUR favorite Alternate Ending? It might even end up on this can in the future. Drink, pontificate, and discuss...

Why Not?!
Flagship Pale Ale 5%
Tropical/Fruit Cocktail
We are excited to can and release Why Not?!, our flagship pale ale, for the very first time. We designed this beer to be the little sister to What If? We wanted a juicy pale ale that was absolutely crushable coming in at 5%, but still has a great mouthfeel and packs a nice hop punch. We combined Pac Sun (our favorite hop) with El Dorado to create this tropical fruit cup hop character that is the perfect everyday pale ale.

As many of you know, the real life Dude designed our brewing system along with Boy Wonder at Specific Mechanical to allow us to do decoction brewing, which is so rare these days. We are able to move our grain from kettle to mash tun and back, boiling ⅓ of the grain to capture additional flavor, color and aroma. It’s a time-consuming process but well worth it as this spectacular beer accentuates a toastiness that wouldn't be found without it. The Mittelfrüh & Tradition hops provide floral notes with a soft bitterness in this extremely delicate Pilsner. The dude abides.

A Beautiful Friendship (Whiskey Barrel with Thai Banana and Cacao)
This Imperial stout is the final variation of our Anniversary stout, which lived in a whiskey barrel for nearly a year. It was conditioned on toasted Thai Banana and cacao inside the barrel for another two months allowing the beautiful friendship of banana, cacao and American char to interplay and form a delicate stout with a pleasant sweetness of overripe banana and chocolate. This is not your modern pastry stout, rather it’s a carefully constructed barrel-aged stout complemented by culinary ingredients that represent the balance we always strive for at Alternate Ending.
