Small Batch Sours + Variants
What does a brewer do with a few 3BBL vessels and a blank slate? Some funky stuff, thats what. We rocked a sour mash of pilsner and white wheat to get the wort down to just tart enough for our liking. We boiled minimally with a touch of hops for balance. Some wort was fermented out on our house lager strain, and some on a combo of kviek and chico ale yeast.
