June Can Release - Part 2
Let’s start with our very exciting collaboration with our friends in Brooklyn (@wildeastbrewing) called A Beer Grows In Brooklyn. We did things a little differently by brewing one of their flagship lagers Little Patience (a beautiful low abv Bohemian Pils) on our decoction system. So the process and recipe were similar, but we didn’t use that famous BK water! Oh, one other surprise you can read about in yesterday's post…
Our second beer will also be a first for us…in cans. Meet Scuba Squad, our house saison! This beer is for our taproom homies who absolutely destroy any saison we put on draft. While this may not have the depth as our barrel and fruited saisons that we bottle, it is super clean, crisp and refreshing!

A Beer Grows in Brooklyn
10°P Czech Pils 4%
Dry Hopped with Saaz
Herbal/Noble/Toasted Grain
Whenever a beer sits in a tank for a long period of time, two things happen: you sample it a lot along the way, and you get really eager to finally release it. Well, the time has finally come for our very special Collab with @wildeastbrewing.
We actually took their recipe and decoction schedule for their Czech-style pils Little Patience (which is a lower ABV version of their flagship Patience and Fortitude) and brewed it on our system with one very distinct difference, we dry-hopped it with Saaz from our mutual friends @crosbyhops.
If you love this dry-hopped pils as much as we do, you should make your next beer run to Brooklyn to check out Wild East's unbelievably charming taproom, which has a beautiful selection of well crafted beers. Actually, if you're doing nothing tomorrow during the day, you may see us brewing The Royal Rug with their twist at Wild East!

We used 100% @crosbyhops Cascade in the boil and dry hopped with even more Cascade, which delivers a beautiful punch of pine with a little bit of fruit.

German Style Kölsch 5%
Contessa/Tradition
Light/Crisp/Floral
You know how to get to Carnegie Hall Don’t ya? Practice! We are bringing back our German-style Kölsch. It’s crisp, clean, and reminiscent of a light lager. It’s brewed with all imported German malt and noble hops that give it a fruity and floral character. This delicate beer is perfect any season, and has always been a popular choice in the taproom!

German Pilsner
Mittelfrüh/Tradition
Toasted Grain/Sweet/Floral
As many of you know, the real life Dude designed our brewing system along with Boy Wonder at Specific Mechanical to allow us to do decoction brewing, which is so rare these days. We are able to move our grain from kettle to mash tun and back, boiling ⅓ of the grain to capture additional flavor, color and aroma. It’s a time-consuming process but well worth it as this spectacular beer accentuates a toastiness that wouldn't be found without it. The Mittelfrüh & Tradition hops provide floral notes with a soft bitterness in this extremely delicate Pilsner. The dude abides.

Why Not?!
Flagship Pale Ale 5%
Tropical/Fruit Cocktail
We are excited to can and release Why Not?!, our flagship pale ale, for the very first time. We designed this beer to be the little sister to What If? We wanted a juicy pale ale that was absolutely crushable coming in at 5%, but still has a great mouthfeel and packs a nice hop punch. We combined Pac Sun (our favorite hop) with El Dorado to create this tropical fruit cup hop character that is the perfect everyday pale ale.

What If?
Everyday go-to IPA 7.5%
What If we brewed an everyday hazy IPA that you just knew was your “go-to” beer? Mr. Reliable in a can! What If it was also clean and balanced? We’ve been contemplating what our flagship IPA recipe should taste like since the time Alternate Ending was nothing more than an idea on the back of a napkin. We knew we wanted something that was crushable, yet also remain true to a traditional IPA with notes of pine and citrus. What If, What If? was really YOUR favorite Alternate Ending? It might even end up on this can in the future. Drink, pontificate, and discuss...
